Located just over the border from the Gedeo zone, but still within the Yirgacheffe woreda, the Ngelle Gorbitu Cooperative's production is a mix of 60% washed and 40% natural coffees - with this batch being the latter.
The natural processed cherries require regular turning in order to maintain an even speed in drying and to stop any over-fermented notes from coming through; this translates to a lot of hands-on labour using raised beds.
The 858 smallholders that form the cooperative pick ripe cherries and bring them to a centralised washing station for processing and bagging in parchment. The coffee is then rested before being dry-milled and bagged.
The cooperative also shares a nursery that contains up to 230,000 seedlings at a time, which helps to maintain crop quality and increase production.
Single origin beans have their own unique flavours and smells, in this case it's great tasting, easy on the palette and a superb choice for both coffee enthusiasts and those who enjoy the occasional cup.
